Studies on the Compositional changes of Pomegranate fruit during Maturity



Abstract
These studies were designed to investigate the changes in polyphenol compounds and anthocyan pigments and also to separate and identify their components. The results were as following;
1. The total polyphenol compounds was composed of ethylacetate-soluble and unsoluble, which showed a peak at stage of the ripening period and then decreased rapidly.
2. Depside type polyphenols, such as p-coumaroyl quinic acid, chlorogenic acid isomer, neochlorogenic acid isomer and neochlorogenic acid and flavanol type polyphenol, such as d-gallocatechin, l-epicatechin and l-catechin were identified from the ethylacetate soluble. Comparing with depside type palyphenols, very small amount of flavanol type polyphenols were found in the ripened fruit juice.
3. The major anthocyan pigments of pomegranate fruit were detected as pelagonin and crysanthemin, which showed up at the 90 days after flowering and then increased rapidly.
